Maillard Reaction – A First for Belize Sugar Industries

For the first time in its history, Belize Sugar Industries is dealing with what is called Maillard Reaction in one of their tanks. Maillard Reaction is a chemical reaction signaled by froth fermentation caused by the quality of the cane delivered at the mill which contains high levels of reducing sugars. The company issued a release yesterday stating that there is a sharp deterioration in the quality of molasses.  ASR/BSI says on making the discovery last week, they contacted the Department of the Environment who visited the site.  The company says it is working along with the Department to find a way to get rid of the affected molasses. They go on say while the matter is difficult to handle, they are expending every effort to ensure total environmental, health and safety compliance and at the same time prevent further losses. The company says it is too soon to know the extent of the loss.
